Vegetarian mushroom quiche

    You can use button, white or chestnut mushrooms or a mixed mushrooms for this quiche.

    Serves: 4 

    • 3 tablespoons olive oil
    • 1 onion, minced
    • 300g button mushrooms, cleaned and sliced
    • 1 (375g) ready rolled shortcrust pastry
    • salt and pepper
    • 2 eggs
    • 150ml crème fraîche
    • 60g grated Gruyère cheese
    • ¼ teaspoon herbes de Provence

    1. Preheat oven to 180 C / Gas 4.
    2. Heat 2 tablespoons olive oil in a frying pan and cook onion till golden. Remove from the pan and set to one side.
    3. Heat the remaining tablespoon olive oil in the frying pan and add mushrooms. Cook till they have released their liquid. Add herbes de Provence, salt and pepper. Let cool.
    4. In a bowl beat eggs and creme fraiche. Add salt and pepper.
    5. Line a quiche or pie tin with the pastry and prick several times with a fork.
    6. Spread mushrooms over bottom of pastry and sprinkle with Gruyère. Pour egg mixture on top,
    7. Bake in the preheated oven for 40 minutes.
