1 tablespoon olive oil
1 onion, chopped
1 large garlic clove, crushed
700g ripe tomatoes, skinned and chopped, or 800g tinned chopped tomatoes
2 teaspoons chopped fresh basil or oregano, or 1 teaspoon dried oregano
1 teaspoon sugar
salt and freshly ground black pepper

Heat the oil in a large saucepan, add the onion and fry gently for 5 minutes until softened. Add the garlic and cook, stirring, for a further 1 minute.
Add the tomatoes with their seeds and juice, then stir in the herbs and sugar and season with salt and pepper. Bring to the boil, then reduce the heat, cover and simmer gently for 30 to 45 minutes, stirring occasionally, until the sauce is thick.
Purée the sauce in a blender or food processor until smooth. Taste to check the seasoning.
To easily skin the tomatoes and chop at the same time, simply cut them in half and then grate the flesh with the large holes of a box grater. The flesh will grate away easily, leaving the skin - and your fingers! - in tact.
