Tom's Italian bolognese sauce

    This is my recipe for a delicious homemade bolognese sauce that I think is close to what you'd get served in the north of Italy! It's packed with onions, carrots, celery, pancetta, mushrooms and red wine. Serve on top of spaghetti or use in lasagne.

    • 2 tablespoons olive oil
    • 2 onions, finely chopped
    • 2 carrots, peeled and finely chopped
    • 2 celery stalks, finely chopped
    • 600g beef mince
    • 300g pancetta, chopped
    • 100g mushrooms, brushed clean and chopped
    • 200ml red wine
    • 600g tomato passata
    • 3 tablespoons tomato puree
    • 500ml beef stock, divided
    • fresh Italian herbs, such as thyme and oregano, to taste
    • salt and pepper, to taste
    • freshly torn basil, to serve

    1. Heat oil in a large pan; add onions, carrots and celery until softened, about 6 to 8 minutes. Stir in beef mince and pancetta and cook until browned.
    2. Add mushrooms, red wine, passata, tomato puree and 3/4 of the stock; simmer and stir over very low heat for 1½ to 2 hours, adding more stock as needed.
    3. Season with Italian herbs, salt and pepper; stir in basil.
