Wild rice vegetable salad

    This wild rice salad is packed with vegetables, including sweetcorn, green beans, peas and carrots. It's so versatile - you can use whatever you have in the fridge (or freezer)!

    Ingredients
    Serves: 4 

    • 250g wild rice
    • pinch of salt
    • 1 large carrot, peeled and diced
    • 75g green beans, trimmed and sliced
    • 150g sweetcorn
    • 60g frozen garden peas, thawed
    • 1 tablespoon butter
    • 1/2 lemon, juiced
    • freshly ground black pepper

    Method

    1. Cook wild rice with a pinch of salt according to the directions on the packet.
    2. Simmer carrots and green beans in boiling water for 5 minutes; add sweetcorn and peas in the last minute.
    3. Drain vegetables and stir in rice, butter and lemon juice. Season to taste with salt and freshly ground black pepper. Serve warm or cold.
