Omelette bretonne (Omelette with artichoke hearts)

    If using tinned artichoke hearts in water, drain them well before using.

    Serves: 4 

    • 15g butter
    • 1 onion, sliced thinly
    • 110g artichoke hearts, sliced
    • 6 large eggs
    • 1 tablespoon minced parsley
    • salt and pepper

    1. Melt butter in a frying pan and add onion and artichoke. Fry until onion becomes translucent, 2 to 3 minutes.
    2. Break eggs into a bowl and beat until foamy. Stir in parsley, salt and pepper and beat again.
    3. Pour eggs into pan and cover. Fry over low to medium heat until the eggs are set, about 6 minutes. C
    4. Serve at once.
