There's no waste with this soup. Use the whole broccoli head, including the stalks, to really make the most of those valuable antioxidants.
*If preferred, you can substitute milk or single cream for the crème fraîche. *Add a few ice cubes to the water in which you refresh the broccoli florets in step 2: the cold will set their deep green colour.
Altered ingredient amounts. I used low fat single cream instead of the creme fraiche and it was yummy. I also didn't bother with the separately cooked broccoli (because i am lazy!) so it was even quicker. - 18 Sep 2008
This soup was fantastic!! We replaced creme fraiche with Total 0% and added leeks with the onion. We also doubled garlic as we always do. Sreved with more Total 0%, broccoli and some parmesan... absolutely delicious!! - 21 Jul 2011
