Poffertjes (Dutch pancakes)

    An easy no-yeast recipe for Dutch pancakes, which are called 'poffertjes' in the Netherlands. They are traditionally made in a poffertjes pan which has indents, but you can use a large frying pan and scoop a small tablespoon of batter per poffertje into the pan. This recipe makes enough to feed a crowd!

    Serves: 12 

    • 250g self-raising flour
    • pinch of salt
    • 250ml milk, room temperature
    • 2 eggs
    • 2 tablespoons maple syrup

    1. Combine flour and salt in a large bowl; gradually whisk in the milk. Add the eggs and syrup and mix until smooth; spoon the pancake batter into a piping bag.
    2. Heat poffertje pan and lightly grease indentations. Fill the holes ¾ full with batter in piping bag and cook over high heat until golden brown; turn them over with a fork and cook the other side until golden brown.
    3. Serve the poffertjes warm with a knob of butter and icing sugar.
