Old fashioned semolina pudding

    This is an old-fashioned set semolina pudding that's prepared in a mould for a pretty presentation. Serve at room temperature on a warm day with berry coulis.

    Serves: 6 

    • 700ml milk
    • 125ml double cream
    • 75g caster sugar
    • 1 1 vanilla pod, sliced lengthways and seeds removed
    • 100g fine semolina
    • fruit coulis or sauce, to serve

    1. Combine milk, cream, sugar and vanilla seeds in a saucepan; bring to boil over low heat. Remove the pan from the heat and sprinkle in the semolina, stirring constantly with a whisk; return to the heat and simmer for 5 minutes until thickened.
    2. Pour semolina mixture into a dessert mould; let cool for 30 minutes, then cover with cling film and chill in fridge for 3 hours, or until set.
    3. Turn the semolina pudding out onto a flat serving plate; drizzle fruit coulis over the top of the pudding and slice into servings.
