Cinnamon sugar waffles

    I had some cinnamon sugar left in a jar and I decided to add it to my waffle batter before cooking them -they tasted amazing!

    Serves: 6 

    • 100g butter, melted and cooled
    • 100g caster sugar
    • 1 teaspoon vanilla extract
    • 2 eggs
    • 250g self raising flour
    • 1 teaspoon baking powder
    • 1/2 teaspoon bicarbonate of soda
    • pinch of salt
    • 100ml lukewarm milk
    • 60g cinnamon sugar, or to taste
    • cinnamon, for dusting

    1. Combine self raising flour, baking powder, bicarbonate of soda and salt together in a bowl.
    2. Mix softened butter, caster sugar and vanilla extract with an electric mixer until creamy; add eggs, one at a time, beating continuously for about 3 minutes.
    3. Add milk and gradually beat in flour mixture until batter is smooth but quite thick; fold in cinnamon sugar, to taste.
    4. Preheat a waffle iron; cook each waffle for about 4 minutes or according to manufacturer's instructions.
    5. Serve warm, dusted with cinnamon.
