Chicken, mushroom and broccoli stir-fry

    This quick and easy chicken stir-fry dish is packed with broccoli and mushrooms. Add cashew nuts for added crunch.

    Serves: 4 

    • 3 tablespoons rapeseed oil
    • 300g chicken breasts, cubed
    • 500g broccoli florets
    • 250g mushrooms, quartered
    • salt and pepper, to taste
    • pinch of nutmeg
    • 150ml single cream
    • 60g cashew nuts, chopped

    1. Heat oil in a wok over medium heat; add chicken and cook on one side for a few minutes to allow chicken to turn golden.
    2. Stir well and add broccoli and mushrooms; cook and stir for 2 minutes.
    3. Season with salt, pepper and nutmeg; stir in cream until well combined. Add cashews and serve.
