Parsley butter

    This compound butter is flavoured with fresh parsley and dried herbs. You could add 1 clove of crushed garlic, if you like. Serve on top of steak, barbecued chops or simply spread on a baguette.

    • 100g butter, room temperature
    • 1 heaped tablespoon finely chopped fresh parsley
    • 1/2 teaspoon dried Italian herbs
    • salt and freshly ground pepper, to taste

    1. Mash butter, parsley, dried herbs, salt and pepper together with a fork until well combined; transfer into a small bowl and serve.
