Chicken, pak choi and cashew stir fry

    This is an easy, but flavourful, chicken stir-fry with pak choy, peppers and cashew nuts.

    • 1 tablespoon coconut oil
    • 2 skinless, boneless chicken breasts, cubed
    • 1 red or yellow pepper, cubed
    • 1 pak choi, sliced
    • salt and pepper, to taste
    • 60g cashew nuts

    1. Heat coconut oil in a frying pan or wok over high heat; add chicken and cook until browned. Stir in red pepper and pak choi; season with salt and pepper.
    2. Stir fry until chicken is cooked through, about 8 to 10 minutes. Add cashews; toss well and serve.
