Bacon and sauerkraut mash

    A creamy side dish of mashed potatoes, sauerkraut and bacon. Serve with smoked Polish sausage for a hearty winter meal.

    Serves: 4 

    • 2kg floury potatoes, peeled and quartered
    • 1 tablespoon lard or oil
    • 500g diced lardons or bacon
    • 1kg sauerkraut
    • 3 tablespoons milk
    • 3 tablespoons butter
    • salt and pepper, to taste

    1. Cook potatoes in boiling water over medium heat until soft, about 20 minutes; drain.
    2. Heat lard in a pan over medium heat; add lardons or diced bacon and cook until crispy, about 4 minutes. Stir in sauerkraut until heated through.
    3. Mash potatoes, milk and butter until well combined; fold in bacon and sauerkraut mixture. Season to taste with salt and pepper, if needed.
