These pink meringues are a lovely gift on Valentine's day. You can divide the white meringue into two portions and colour one a deep red and the other pink for added wow factor!

Makes: 24 small meringues
8 egg whites
175g caster sugar
1 tablespoon vanilla sugar
1 or 2 drops red food colouring

Preheat oven to 110 C / Gas 1/4. Line baking trays with baking paper.
Whisk egg whites in a large clean bowl with an electric beater until stiff peaks form; gradually whisk in the caster sugar, a little at a time, until mixture is thick and glossy. Add red food coloring and beat for 1 or 2 seconds to combine.
Spoon the meringue mixture into a piping bag fitted with a plain nozzle; pipe small mounds of meringue mixture onto prepared baking trays, leaving space between each one.
Cook meringues in preheated oven for two hours, or until crisp. Turn off heat but leave the meringues inside until the oven has completely cooled down.
