Tomato, onion and cheese omelette

    This is a simple but tasty omelette that I like to make for myself on a weekend morning! You can use spring onions instead of white onion, if you prefer.

    Serves: 1 

    • 2 eggs
    • pinch salt and freshly ground black pepper
    • 1 tablespoon olive oil
    • 1/2 onion, finely chopped
    • 1 tomato, chopped
    • 30g grated cheese, such as Cheddar or Parmesan

    1. Whisk eggs, salt and black pepper together in a bowl.
    2. Heat oil in a frying pan over medium heat. Stir in onion to coat in the oil; add tomatoes and cook until softened.
    3. Add beaten egg mixture and reduce heat to low.
    4. Wait for the omelette to set a bit, but not completely; sprinkle grated cheese on top. Cover the pan with a lid for about 30 seconds, shaking often to ensure even cooking. Fold one side of the omelette over the other; slide onto a plate and serve.
