Mozzarella, tomato and basil mini skewers

    Fresh mozzarella balls are marinated briefly in olive oil and Italian herbs to give them a boost of flavour. Skewer them onto short cocktail sticks with ripe cherry tomatoes and fresh basil for a wonderful summertime starter or nibble to share!

    Serves: 4 

    • 150g mini mozzarella balls, drained
    • 2 tablespoons olive oil
    • pinch of dried mixed herbs
    • pinch of freshly ground black pepper
    • pinch of salt
    • ripe cherry tomatoes, halved
    • fresh basil leaves
    • short wooden cocktail sticks

    1. Place mozzarella balls in a shallow dish; add olive oil, mixed herbs, salt and pepper. Use clean hands or a wooden spoon to toss balls in the oil; set aside to marinade for 10 to 15 minutes.
    2. Skewer a ball of mozzarella on a wooden cocktail stick; add a folded basil leaf and a piece of cherry tomato. Repeat with remaining ingredients; serve.
