Fresh mozzarella balls are marinated briefly in olive oil and Italian herbs to give them a boost of flavour. Skewer them onto short cocktail sticks with ripe cherry tomatoes and fresh basil for a wonderful summertime starter or nibble to share!

150g mini mozzarella balls, drained
2 tablespoons olive oil
pinch of dried mixed herbs
pinch of freshly ground black pepper
pinch of salt
ripe cherry tomatoes, halved
fresh basil leaves
short wooden cocktail sticks

Place mozzarella balls in a shallow dish; add olive oil, mixed herbs, salt and pepper. Use clean hands or a wooden spoon to toss balls in the oil; set aside to marinade for 10 to 15 minutes.
Skewer a ball of mozzarella on a wooden cocktail stick; add a folded basil leaf and a piece of cherry tomato. Repeat with remaining ingredients; serve.
