Lavender shortbread

    For recipes with lavender, a little goes a long way, and not all culinary lavender types are the same. To make sure the lavender taste is not overpowering, start with 1 teaspoon and taste, then add more if desired.

    Makes: 24 biscuits

    • 100g vanilla sugar (see footnote)
    • 1 to 2 teaspoons dried culinary lavender
    • 200g cold butter, diced
    • 300g plain flour
    • melted butter for brushing
    • Fleur de sel (optional)

    1. Preheat oven to 180 C / Gas 4. Line a baking tray with greaseproof paper.
    2. In a bowl rub the vanilla sugar with the lavender till fragrant.
    3. In another bowl beat butter and sugar till creamy. Add flour and mix till just evenly combined. Refrigerate for 30 minutes.
    4. Transfer mixture to a floured surface and roll it out about 1cm thick. Cut into squares or other shapes and place on the prepared baking tray. Brush with butter and sprinkle with fleur de sel if desired.
    5. Bake in the preheated oven till the shortbread just starts to get a golden colour, 20 to 25 minutes. Let cool on wire rack.
