Salted caramel for ice cream

    If you've never made salted caramel, you might be surprised how easy it is. And it's not only scrumptious on ice cream but also on pancakes, crepes, and more.

    Makes: 1 small jar

    • 100g caster sugar
    • 1 teaspoon water
    • 45g salted butter
    • 200ml double cream
    • 1 pinch fleur de sel or fine sea salt

    1. Add butter and water to a saucepan. Heat it over medium heat till the sugar has melted.
    2. Once the sugar starts to brown, add butter and cream (careful it splashes!). Whisk till smooth and stir in salt.
    3. Simmer over low heat for 5 minutes, then pour into a sterilised jar and close.
