Mousse au chocolat without cream

    You can serve this chocolate mousse as a dessert or use it to make a chocolate charlotte. The minimum rest time is 0 hours of rest but 12 hours are ideal. Chocolate mousse can only be stored for 48 hours.

    Serves: 6 

    • 200g dark chocolate
    • 30g butter
    • 6 eggs
    • 1 pinch salt
    • 30g caster sugar

    1. Melt the chocolate and the butter in a double boiler. Let cool.
    2. Separate the eggs. Beat the egg whites with a pinch of salt until stiff. Add the salt and sugar and keep beating till very stiff.
    3. Add the yolks to the chocolate, whisking vigorously. Gently fold the egg whites into the chocolate. Mix gently with a spatula, avoiding breaking the egg whites.
    4. Refrigerate for at least 3 hours before serving.


    This recipe contains raw eggs. It is recommended that pregnant women, young children and the elderly do not consume raw eggs.
