If you don't have a non-stick baking sheet, line any baking sheet with grease-proof or baking paper.
I couldn't get filo pastry so used pre-rolled puff pastry ... also didn't have fresh thyme so used dried thyme. Took a bit longer to cook than the recipe says but I suspect that that is more than compensated for by the reduced work.... Everyone loved this dish... Goats' cheese and thyme ...heaven! I rate this recipe HIGHLY. What I don't rate though, are my skills with filo pastry! But as this is sure to become a favourite I'm sure practice will make perfect.
