60g caster sugar
3 eggs, separated
30g speculoos biscuits
a few drops vanilla extract
2 teaspoons vanilla sugar
25 Oreo® biscuits

In a bowl beat sugar with egg yolks till pale and fluffy. Stir in mascarpone.
In another bowl beat egg whites till stiff. Fold into mascarpone mixture.
Crumble the speculoos and distribute over 6 small glasses.
In a bowl stir milk with vanilla. Dip the Oreos in the milk then crush them a bit and place in the glasses, add about 2 Oreos in each glass. Top with mascarpone mixture, then add a second later of Oreos and mascarpone.
Decorate each glass with another Oreo. Refrigerate for at least 3 hours.
Dust with baking cocoa just before serving.
