Chicken katsu with tonkatsu sauce

    I love this Japanese chicken dish! In Japan katsu chicken is served with tonkatsu, a sweet and sour sauce.

    Serves: 2 

    • For the tonkatsu sauce
    • 2 tablespoons Worcestershire sauce
    • 2 tablespoons ketchup
    • 1 tablespoon oyster sauce
    • 1 teaspoon caster sugar
    • For the katsu
    • 2 boneless, skinless chicken breasts
    • salt and pepper
    • 1 tablespoon granulated garlic
    • 2 tablespoons plain flour
    • 1 egg, lightly beaten
    • 100g panko
    • vegetable oil for frying

    1. In a bowl mix all the ingredients for the tonkatsu sauce and refrigerate.
    2. Pat chicken breasts dry with kitchen paper. Season with salt, pepper and granulated garlic.
    3. In three deep plates, add the flour in one, the panko in another and the beaten egg in the third.
    4. Heat oil in a frying pan. First dredge each chicken breast in the flour then in the beaten egg and finish coating with panko.
    5. Place in the hot oil and fry till no longer pink inside, 5 to 7 minutes on each side. Slice thinly and drizzle with the tonkatsu sauce.
