If you don't have butter, or you are vegan, use margarine to make shortcrust pastry. This recipe works for sweet or savoury shortcrust pastry.

Makes: 1 tarte
200g plain flour
3 tablespoons caster sugar (omit for savoury pastry)
1 pinch salt

Add water, sugar if using, margarine and salt in the food food processor and process till crumbly, just a few seconds. With the food processor running, add a little ice water, 1 tablespoon at a time, till the pastry holds together.
Wrap in cling film and let firm up, it's easier to roll out.
