Shortcrust pastry without butter

    If you don't have butter, or you are vegan, use margarine to make shortcrust pastry. This recipe works for sweet or savoury shortcrust pastry.

    Ingredients
    Makes: 1 tarte

    • 200g plain flour
    • 3 tablespoons caster sugar (omit for savoury pastry)
    • 100g margarine
    • 1 pinch salt
    • d'eau glacĂ©e
    • ice water

    Method

    1. Add water, sugar if using, margarine and salt in the food food processor and process till crumbly, just a few seconds. With the food processor running, add a little ice water, 1 tablespoon at a time, till the pastry holds together.
    2. Wrap in cling film and let firm up, it's easier to roll out.
