Brioche au chocolat

    Light, fluffy brioche buns with chocolate filling, a perfect treat for a Sunday brunch or afternoon snack.

    Makes: 500 g de brioche environ

    • 1 (8g) sachet dried active yeast
    • 200ml lukewarm milk
    • 500g plain flour
    • 90g caster sugar
    • 2 eggs
    • 1 teaspoon salt
    • 75g butter, softened
    • 50g chocolate chips or chopped plain chocolate
    • 1 egg for brushing

    1. Stir the yeast and the milk in a small bowl and let it sit until frothy. In a large bowl combine flour, sugar, eggs, salt, butter and the yeast milk mixture.
    2. Knead until the dough is smooth and elastic. Cover with and let rise in a warm draft free place until double in volume, about 2 hours.
    3. Roll out the dough on a floured work surface. Sprinkle the chocolate chips on one half of the dough then roll it up into a log and cut it into balls of about 40g each.
    4. Shape each piece into a balls and place it in a large baking tin. Leave a space between the balls because they will double in volume. Cover and let proof until doubled in size, about 40 minutes.
    5. Preheat the oven to 175 C / Gas 4.
    6. Brush with the beaten egg and bake until golden brown, about 20 minutes.
