Cloud bread with goats cheese

    Cloud bread is probably the closest thing to bread rolls that you can make without flour.

    Makes: 8 cloud bread

    • 50g fresh goats cheese, at room temperature
    • 1 teaspoon caster sugar
    • 2 eggs, separated
    • 1 pinch salt

    1. Preheat oven to 160 C / Gas 3. Line a baking tray with greaseproof paper or a silicone baking mat.
    2. In a bowl beat goats cheese with sugar and egg yolks till smooth and creamy.
    3. In another bowl beat egg whites with salt till they stand in stiff peaks. Gently fold into the egg yolk mixture.
    4. Spoon circles of 7 to 10cm in diametre on the baking tray.
    5. Bake until golden, 15 to 20 minutes. Let cool and serve promptly.
