Avocado sandwich with cheese and tomato

    This is one of my standard sandwiches. When I eat it at home, I make it an open face sandwich.

    Serves: 1 

    • 2 slices multigrain bread
    • 2 teaspoons Dijon mustard
    • 2 teaspoons low fat mayonnaise
    • 2 small leaves romaine lettuce
    • 2 slices Edam or medium aged Gouda cheese
    • 1/2 ripe avocado, sliced
    • 1/2 tomato, sliced
    • lemon juice
    • sprouts (optional)

    1. In a small bowl stir mustard with mayo and spread on each slice of bread.
    2. Top each slice with a lettuce leaf, cheese, avocado and tomato, Drizzle with a little lemon juice. Add sprouts if desired and assemble sandwich.
