Crab salad with tomato and fennel

    Crab salad does not necessarily need a thick heavy mayonnaise dressing. This is a light combination with tomato, shaved fennel and lemon juice.

    Serves: 4 

    • 1 (60g) bag lamb's lettuce
    • 1 small fennel bulb
    • 100g meat, crumbled
    • 6 cherry tomatoes, halved
    • 1 lemon, juiced
    • salt and pepper

    1. Wash and dry lettuce and place in a salad bowl.
    2. Grate or shave fennel and add to lettuce.
    3. Add crab meat and cherry tomatoes.
    4. Drizzle with lemon juice, season with salt and pepper and serve at once.
