Wild garlic mayonnaise

    This garlicky mayonnaise is delicious with cold cuts, grilled or fried fish, or as a dip. The amount of wild garlic you add is up to taste, from a couple of tablespoons to a small bunch.

    Serves: 6 

    • 1 large fresh egg
    • 2 fresh egg yolks
    • 1 teaspoon Dijon mustard
    • salt
    • 160ml olive oil
    • 2 tablespoons extra virgin olive oil
    • 2 to 3 tablespoons lemon juice
    • minced wild garlic, to taste

    1. Add egg and egg yolk to your food processor and turn it on. Slowly pour in olive oil till the mixture becomes thick and creamy.
    2. Add lemon juice and salt. Stir in minced wild garlic. Tip into a jar with a lid and refrigerate till serving.


    This recipe contains raw eggs. It is recommended that pregnant women, young children and the elderly do not consume raw eggs.
