Pancakes with wild garlic and goats cheese

    Savoury pancakes filled with goats cheese and wild garlic. If you cannot find wild garlic, you can also use chives instead.

    Serves: 2 

    • 60g plain flour
    • 1 pinch salt
    • 100ml milk
    • 50ml water
    • 2 eggs
    • butter for frying
    • 2 tablespoons chopped walnuts
    • 250g soft goats cheese
    • 2 tablespoons minced wild garlic
    • pepper

    1. In a bowl stir flour, salt, milk, water and eggs till smooth.
    2. Heat butter in a non stick frying pan and cook 4 thin pancakes. Keep pancakes warm whilst toasting the walnuts in the pan till lightly browned and fragrant.
    3. In a bowl stir cheese with wild garlic till smooth and spreadable. Season with salt and pepper.
    4. Spread pancakes with the filling and roll up tightly. Reheat them briefly in the pan or serve at room temperature.
