Sun dried tomato butter

    This garlicky compound butter with sun dried tomatoes is delicious on fresh bread, or with a grilled steak.

    Serves: 20 

    • 8 to 10 sun dried tomatoes in oil
    • 250g butter, at room temperature
    • 2 to 3 garlic cloves, minced
    • 2 tablespoons minced fresh basil
    • 1/4 teaspoon salt

    1. Drain sun dried tomatoes well to removed excess oil.
    2. Mince tomatoes, garlic and basil finely with a knife or in the food processor. Add to a bowl.
    3. Add butter and mix using a fork. Season with salt and pepper and fill into a jar with a lid. Refrigerate till serving.
