Gooseberry hazelnut cake

    This is a gooseberry without any butter so it's low fat.

    Makes: 1 Kuchen

    • 2 eggs
    • 60ml milk
    • 200g caster sugar
    • 1 pinch salt
    • 215g plain flour
    • 500g gooseberries, fresh or frozen
    • 60g ground hazelnuts
    • 4 teaspoons vanilla sugar

    1. Preheat oven to 190 C / Gas 5. Grease a 23cm cake tin. vorheizen.
    2. In a bowl beat eggs, milk, sugar, salt and flour with the electric mixer till smooth. Tip into tin and spread evenly.
    3. Scatter gooseberries ofter mixture, gently pressing them down a bit. In a bowl mix hazelnuts and vanilla sugar and scatter on top.
    4. Bake in the preheated oven till a tester comes out clean, about 30 minutes.
