The potatoes do not need to be pre boiled for this dish but it's important to slice them as thinly as possible.

1kg potatoes
salt and pepper
ground nutmeg
250g grated Emmental cheese
200ml double cream
50g butter, diced

Preheat oven to 240 C / Gas 9. Grease a large baking dish.
Peel potatoes and slice very thinly. Layer in the baking dish and add little salt and pepper after each layer. In a bowl whisk cheese and cream and pour over potatoes. Scatter butter on top.
Bake in the preheated oven till bubbly and browned, about 1 hour. Let stand 10 minutes before serving.
