Pasta with wild garlic sauce

    Wild garlic is a delicious with any kind of pasta.

    Serves: 4 

    • 500g pasta
    • 4 tablespoons olive oil
    • 200ml white wine
    • 1 generous pinch cayenne pepper
    • 1/2 teaspoon salt
    • all purpose savoury seasoning
    • pepper
    • 200ml double cream
    • 1 large bunch wild garlic, cut into narrow strips
    • freshly grated Parmesan cheese

    1. Cook pasta in plenty of salted water till al dente.
    2. In an large frying pan add olive oil, wine, cayenne, salt, seasoning, pepper and cream and bring to a simmer. Let reduce slightly.
    3. Drain pasta and and add to pan. Add wild garlic and toss. Cover with a lid and let reheat over very low heat for 3 to 4 minutes. Serve with Parmesan cheese.
