Vegan oat bars

    Moderately sweet bars that you can adapt to your liking using raisins or cranberries instead of sultanas.

    Makes: 24 biscuits

    • 100g sultanas
    • 90g rolled oats
    • 1 to 2 tablespoons cinnamon
    • ½ teaspoon salt
    • 2 tablespoons vegetable oil
    • 4 tablespooons light brown soft sugar
    • 70g plain flour
    • 70g wholemeal flour
    • 7 tablespoon unsweetened fruit juice (apple or pear)

    1. Preheat oven to 180 C / Gas 4. Grease a baking tin.
    2. Soak sultanas for a couple of minutes in hot water. Drain. Mix in a bowl with all other ingredients, adding as much juice as necessary so that everything holds together.
    3. Roll out on the baking tray to a rectangle 30x20cm and bake in the preheated oven for 20 to 30 minutes. verteilen. Let cool slightly then cut into squares or rectangles. Store in a tin after fully cooled.
