Chocolate loaf cake with red wine

    The addition of red wine makes this chocolate cake wonderfully moist.

    Makes: 1 loaf cake

    • 250g butter, softened
    • 250g caster sugar
    • 4 eggs
    • 100 to 150g plain chocolate, grated
    • 1 teaspoon cinnamon
    • 1 heaped teaspoon instant drinking chocolate
    • 1 heaped teaspoon capuccino instant coffee
    • 2 teaspoons butter vanilla natural baking emulsion (optional)
    • 1 generous glug rum
    • 250g plain flour
    • 4 teaspoons baking powder
    • 125ml dry red wine

    1. In a bowl beat butter, sugar, eggs, chocolate cinnamon, drinking chocolate, capuccino, butter vanilla emulsion, and rum till smooth.
    2. Add flour, baking powder and red wine and beat till smooth.
    3. Grease and flour a loaf tin and tip the mixture into it.
    4. Set the oven to 150 C / Gas 2 (do not preheat the oven for this recipe) and bake till a toothpick comes out clean, about 90 minutes.
