Turkey and vegetable pasta bake

    A pasta bake is the perfect one-pot dish for an informal party. This one is healthy, hearty and utterly delicious.

    Serves: 6 

    • 250g penne
    • 1 tbsp olive oil
    • 1 large onion, chopped
    • 375g minced turkey
    • 2 x 400g cans chopped tomatoes with herbs
    • 300g frozen, sliced green beans, thawed
    • 300g frozen broccoli florets, thawed and chopped
    • 150ml soured cream
    • 50g Parmesan, freshly grated
    • salt and freshly ground black pepper

    1. Cook the pasta in a large pan of lightly salted boiling water for 10–12 minutes, or according to the packet instructions, until al dente. Drain and transfer to a large bowl. Preheat the oven to 180°C (gas 4).
    2. Meanwhile, heat the oil in a large deep pan over a medium heat, add the onion and cook for 5 minutes or until softened. Add the turkey to the pan and cook for 4–5 minutes until lightly browned. Stir in the tomatoes with their juice and cook for 5 minutes or until the liquid has reduced by half.
    3. Stir the tomato mixture into the pasta and season with salt and pepper.
    4. Add the beans, broccoli and soured cream to the pasta mixture and stir everything together well.
    5. Spread the mixture in a large, deep baking dish, measuring about 33 x 23cm. Sprinkle the Parmesan over the top.
    6. Bake for 25–30 minutes until golden and slightly crispy on top. Serve hot.


    *Canned tomatoes flavoured with herbs are a useful convenience product. However, if using regular canned chopped tomatoes, add 1/2 tsp dried thyme or mixed herbs to the mixture in step 2.
    *For a vegetarian variation, use Quorn mince and replace the Parmesan with an alternative cheese.
    *Serve with a mixed-leaf salad tossed with a fruity vinaigrette dressing.

    Altered ingredient amounts. We really liked the taste of this resipe but found it a little dry - any ideas from anyone?  -  08 Sep 2010


    Just made this, used cheddar cheese instead of Parmesan and finished under the grill. Will try it with beef mince for an improved flavour.  -  03 Feb 2016
