Apple and hazelnut cake

    This is a dairy free apple cake. I recommend unmoulding it while it's still warm so the apple pieces that tend to sink during baking keep the cake nicely moist and the bottom does not turn soggy.

    Makes: 1 Kuchen

    • 150g plain flour
    • 150g ground hazelnuts
    • 1 teaspoon cinnamon
    • 2 heaped teaspoons baking cocoa
    • 4 teaspoons baking powder
    • 200g caster sugar
    • 250ml vegetable oil
    • 4 eggs
    • 500g apples (about 3 to 4), pfel (ca. 500 g), geschält, Kerngehäuse entfernt und gewürfelt

    1. Preheat oven to 180 C / Gas 4. Grease a springform tin.
    2. In a bowl mix flour, nuts, cinnamon, cocoa and baking powder.
    3. In another bowl beat oil, sugar and eggs till light and foamy. Stir in the four mixture.
    4. Peel, core and dice apples and fold into mixture. Tip into the prepared tin.
    5. Baked in the preheated oven for 55 minutes. Let cool slightly then carefully unmould onto a cake plate.
