Citrus chive butter

    This compound butter is delicious with grilled meat or potatoes, or as a spread on freshly baked bread or baguette.

    Serves: 6 

    • 150g butter, softened
    • 4 to 5 tablespoons minced chives
    • 1/2 teaspoon minced fresh thyme
    • 1 1/2 teaspoons lemon or lime juice
    • lemon or lime zest
    • salt and pepper

    1. In a bowl stir butter with herbs and lemon juice till creamy. Season to taste with salt and pepper.
    2. Shape into a roll and wrap tightly in cling film. Chill till firm.
