Pointed cabbage with new potatoes

    If you get pointed cabbage in your veg box, you are in for a treat. It is tender and sweet and does not require much cooking at all. Together with new potatoes, it makes a lovely side dish.

    Serves: 4 

    • 1 to 2 tablespoons butter
    • 1 pointed cabbage (about 800g), core removed and cut into wide strips
    • 1 shallot, minced
    • 2 to 3 new potatoes, scrubbed
    • 200ml vegetable stock
    • salt and pepper
    • Pfeffer
    • 1 pinch sugar
    • 1/4 teaspoon apple cider vinegar

    1. Heat butter in a large saucepan and fry shallot till translucent. Add cabbage and fry for 2 to 3 minutes, stirring.
    2. Coarsely grate potatoes and add to pan together with the stock.
    3. Add salt, pepper and sugar and cover. Cook over low heat for 15 to 20 minutes. Add apple cider vinegar to taste and serve.
