Courgette with beef mince

    Stuffed courgette is too much effort for a quick dinner, instead I often fry beef mince and courgette in a pan with a creamy sauce. We eat it with pasta, rice or potatoes.

    Serves: 4 

    • 1 large onion
    • 1 large garlic clove
    • 1kg courgette
    • 500g beef mince
    • 1 veg stock cube
    • 125ml warm water
    • salt and pepper
    • ground nutmeg
    • 1 tablespoon herbes de Provence
    • 200ml creme fraiche

    1. Mince onion and garlic. Cut off both ends from the courgette. Cut courgette in half and scrape out large seeds with a spoon. Discard seeds and cube courgette.
    2. In a frying pan fry mince till browned and crumbly. Add onion and fry till translucent. Add garlic and courgette and fry for a further 3 minutes, stirring.
    3. Dissolve stock cube in the water and add to pan Stir to mix., then simmer over low to medium heat for 10 minutes.
    4. Stir herbes de Provence with the crème fraiche and add. Simmer for a few more minutes till thickened. Season with salt and pepper.
