Garlic scape butter

    If you like garlic butter, try making it with garlic scapes, the flower buds of the garlic that are only available for a very short time in the late spring/early summer. Serve as a spread for freshly baked bread, with roasted vegetables, or grilled meat or fish.

    • 100g butter, softened
    • 2 to 3 garlic scapes, pointy tips removed
    • 1 small bunch parsley
    • salt and pepper

    1. Remove stems from the parsley and discard. Mince garlic scapes and leaves very finely (you can also use the food processor for this).
    2. Add butter and salt and pepper and stir well till evenly combined. Chill till serving.
