Wholemeal yoghurt waffles

    Waffles with wholemeal flour and yoghurt, which makes them nicely fluffy. Serve these with fresh berries or fruit compote, or just dust with with icing sugar.

    Serves: 4 

    • 125g butter, softened
    • 100g raw cane sugar or demerara sugar
    • 2 teaspoons vanilla sugar
    • 1/4 teaspoon grated lemon zest
    • 3 eggs
    • 250g wholemeal flour
    • 1/2 teaspoon baking powder
    • 250g natural yoghurt
    • oil or butter for greasing the waffle iron

    1. In a bowl beat butter, sugar, vanilla sugar and lemon zest till creamy. Add eggs one after another and beat well after each addition.
    2. In another bowl mix flour and baking powder. Fold into egg mixture, alternating with the yoghurt.
    3. Heat waffle iron and grease as needed. Add about 2 tablespoons batter and bake till golden brown. .
