Cheese and bacon waffles

    Here is a recipe for savoury waffles with cheese and bacon. It's a brunch favourite in our family.

    Serves: 6 

    • 100g lean bacon, diced
    • 2 tablespoons vegetable oil
    • 150g plain flour
    • 1 generous pinch baking powder
    • 150ml milk
    • 1 teaspoon caster sugar
    • 1 pinch salt
    • 3 eggs
    • 50g grated Gruyere cheese

    1. Fry bacon till crispy Let cool and crumble.
    2. in a bowl beat flour, baking powder, milk, sugar, salt and eggs till smooth. Stir in bacon and leave to rest for 30 minutes. Stir in cheese.
    3. Preheat waffle iron and bake waffles till golden brown. If needed, grease waffle iron between the batches.
