Palmiers (French palm hearts)

    These classic French pastries are super simple and require only three ingredients.

    Makes: 20 biscuits

    • 1 (375g) packet ready rolled puff pastry
    • 50g caster sugar
    • 1 egg yolk, lightly beaten

    Prep:10min  ›  Cook:20min  ›  Ready in:30min 

    1. Preheat the oven to 180 C / Gas 4.
    2. Roll out the puff pastry and sprinkle with sugar (reserve 2 to 3 pinches).
    3. Roll up each side from the outside to the centre. Place in the freezer for 5 minutes to harden so that it can be cut more easily afterwards.
    4. Cut into slices and place them on a baking tray covered with greaseproof paper. Sprinkle with reserved sugar.
    5. Brush with egg yolk and bake till golden brown, 10 to 20 minutes depending on size.
