Rillettes de porc (French pork confit)

    For rilettes, a type of confit, seasoned fatty meat is slowly cooked for several hours, then shredded. It is served like pâté.

    Ingredients
    Makes: 2 pots

    • 500g pork belly
    • 5g salt
    • 1 teaspoon pepper
    • 1 bay leaf
    • 1 garlic clove, cut in half

    Method

    1. Remove the rind and cartilages from the pork belly. Cut into small cubes. Place pork in a saucepan. Add salt, pepper, bay leaf and garlic clove cut in half. Add enough water cover it with 5 to 7cm.
    2. Bring to the boil, then lower the heat and cover .
    3. Simmer over low heat until the liquid has completely evaporated (this can take up to 4 hours). Remove the bay leaf and shred the meat with a fork, if necessary use a blender.
    4. Fill the rillettes into sterilized jars and compress them to remove any air pockets. Let it cool before refrigerating.
