About this recipe:
Delicious chocolate/coffee cake with a creamy white chocolate icing. Perfect with a cup of tea!
225g self raising flour
225g butter, softened
225g caster sugar
1 1/2 teaspoons of baking powder
1 1/2 teaspoons of cocoa powder
4 eggs, beaten
2 heaped tablespoons of instant coffee dissolved in 3 tablespoons of boiling water
150g good quality white chocolate
175g icing sugar
3 tablespoons of butter, softened
3 tablespoons of milk

1 hr 10 min
Preheat oven to gas mark 4 (180 degrees C)
Grease and line a shallow rectangular tin (approx. 10 inch x 7 inch)
Sift the flour, baking powder and cocoa into a bowl and mix.
Add the caster sugar, beaten eggs, softened butter and coffee mixture and mix well by hand or with an electric mixer until smooth.
Spoon the mixture into the tin and flatten the top.
Bake in the oven for approx. 40 mins until firm and springy.
Leave to cool in the tin for 10 minutes then tip out on to a wire rack and remove the lining paper.
Whilst the cake is cooling, make the icing.
Break the white chocolate into pieces and place in a bowl with the icing sugar, butter and milk.
Place in the microwave on medium heat for 30 seconds or until the chocolate has melted and the mixture is smooth.
Spread mixture on top of cake and dust with cocoa powder if desired.
Cut cake into squares, serve!
delicious! I used a 100g white toblerone for the chocolate topping, very yummy

I added an extra 1/2 tablespoon of coffee to this after reading the other reviews and used the electric beaters to mix (didn't even sieve the flour) only had an 8x12" oblong tin so i cooked it for 35 minutes, it turned out well risen and was lovely and moist - when it was cool i cut it into squares, split each square and sandwiched it with butter icing

lovely cake i made it round which went down a treat definatly do it aain but with very strong coffee
