Pizza with smoked salmon

    The trick to a really good smoked salmon pizza is to add the salmon after baking the pizza so it won't dry out.

    Serves: 3 

    • 1 ready to roll pizza dough
    • 3 to 4 tablespoons crème fraîche
    • dried crumbled oregano
    • pepper
    • 1 teaspoon garlic granules
    • coarsely grated mozzarella
    • grated Parmesan cheese
    • 4 fresh button mushrooms, sliced
    • 4 slices smoked salmon
    • minced fresh coriander

    1. Preheat the oven to 200 C / Gas 6.
    2. Roll out the pizza dough and place on a baking tray lined with greaseproof paper.
    3. In a bowl stir crème fraîche, oregano, pepper and garlic till smooth. Spread on the pizza dough and sprinkle with mozzarella and Parmesan cheese. Scatter mushrooms on pizza.
    4. Bake in the preheated oven for 15 minutes. Place salmon on hot pizza, sprinkle with coriander and serve at once.
