Chorizo muffins

    These savoury muffins can be in the oven in less than 10 minutes. A nice accompaniment for soup if you want a change from bread. The recipe can be easily double to make 12 muffins.

    Serves: 6 

    • 150g plain flour
    • 4 teaspoons baking powder
    • 200g Emmental cheese, diced
    • 100g Spanish chorizo, diced
    • 65g pitted green olives, chopped
    • 3 eggs
    • 150ml milk
    • 80ml vegetable oil
    • salt and pepper

    1. Preheat oven to 180 C / Gas 4. Grease 6 moulds of a muffin tin or line with 6 paper cases.
    2. In a bowl mix flour and baking powder.
    3. Stir eggs, milk and oil and add to flour mixture. Stir till well combined, then stir in chorizo, cheese and olives. Add salt (very little, as the chorizo is already salty) and pepper. Distribute mixture among 6 muffin cases.
    4. Bake till golden brown, about 25 minutes.
