Red pepper and feta dip

    For this dip, a whole pepper is slowly roasted in the oven till soft. To make this less energy-consuming, roast the pepper alongside something you have in the oven that requires the same temperature.

    Makes: 1 small jar

    • 1 red pepper
    • 100g feta
    • 1 teaspoon olive oil
    • 1 garlic clove
    • 1 teaspoon cayenne, or less to taste
    • 1/2 teaspoon dried oregano
    • 75g natural yoghurt (optional)

    1. Line a small baking dish with greaseproof paper. Place pepper on top and roast for 40 minutes, flipping it over after half of the time. Let cool for 15 minutes, then remove skin and seeds.
    2. Add pepper and all remaining ingredients to blender and puree till smooth, If you prefer a more sauce-like liquid consistency, add some or all of the yoghurt.
