About this recipe:These easy beef or pork meatballs are a welcome addition to any meal. Try serving with a fresh tomato and onion salsa and pasta or oven-baked potato wedges (see footnote), if you have time. Put these on the top shelf of the oven before starting the meatballs, and they will be ready by the time the meatballs are cooked.
1 chopped onion
1/2 chopped green pepper
1/2 tbsp olive oil
500g lean minced pork or beef
2 tsp Cajun spice blend
1 tbsp chopped fresh mint
dried fine white breadcrumbs

Fry 1 chopped onion and 1/2 chopped green pepper in 1/2 tbsp olive oil for 5 minutes. Add to 500g lean minced pork or beef with 2 tsp Cajun spice blend, 1 tbsp chopped fresh mint and ground black pepper. Mix, then roll roughly into ping-pong-sized balls and toss in dried fine white breadcrumbs to coat. Arrange on a baking tray and bake in a preheated oven at 220°C (200°C fan oven), gas 7 for 15 minutes or until golden brown.
For potato wedges, cut 900g unpeeled potatoes lengthways into same-size wedges. Put into a large bowl and pour over 2 tbsp olive oil. Stir, or cover and shake, to coat in the oil, then transfer to a baking sheet in a single layer. Season. Put on the top shelf of the oven and bake at 220°C (200°C fan oven), gas 7 for 20-25 minutes or until tender and golden brown.
